| Filling: | |
| 2 | eggs |
| 2 Tbls | Flour |
| 1 c | Sugar |
| 3 Tbls | Lemon Juice |
| 1 tsp | Grated Lemon Zest |
Preheat oven to 350 and get out an 8" square baking pan
Crust: Beat butter and sugar together until blended. Add lemon zest, flour and salt. Mix thoroughly until it forms corse crumbs. Press into baking pan. Bake 20 minutes. Remove from oven and cool on wire rack.
Filling: Beat together all ingredients and pour over crust. Bake 20-25 minutes. Top should be dry and sligltly brown aroundthe edges. Do not overbake. The filling should be soft and custard like. Remove from oven and cool. Cut into 2" squares.
